The fruit is carefully harvested at optimal ripeness, often in the cooler hours of the day to preserve delicate aromatics. In the cellar, gentle pressing and a cool, temperature‑controlled fermentation in stainless steel are used to safeguard Vermentino’s crystal‑clear floral and stone‑fruit character. The wine is then matured for a short period on fine lees to enhance texture and aromatic complexity, while maintaining a pure, crisp profile.
