Leon Domecq Cream Señorío de Callao is a classic Andalusian cream-style fortified wine from the historic heart of Jerez, crafted at 18% ABV from Palomino and Pedro Ximénez grapes. Marrying the elegance of traditional dry sherry with the richness of naturally sweet wines, it offers a supple, rounded profile that’s ideal both for contemplative sipping and versatile pairing at the table. Drawn from century-old soleras in one of Jerez’s most authentic quarters, it encapsulates the heritage and quiet luxury that have made the region’s fortified wines world famous.

Tasting Notes
In the glass, this cream sherry-style wine shows a deep mahogany to chestnut-brown hue with amber highlights and a slow, glyceric swirl that hints at its concentration. The nose is generous and layered, with notes of roasted nuts, toffee, dried figs and dates, complemented by hints of orange peel, caramel, light molasses, and a subtle touch of oak spice. On the palate, Leon Domecq Cream Señorío de Callao is silky and medium-to-full-bodied, balancing the natural sweetness of Pedro Ximénez with the structure and salinity of Palomino. Expect flavors of raisins, baked apple, walnut, butterscotch, and dark honey, underpinned by a gentle oxidative character and a fine, mouthwatering acidity that keeps the finish long and fresh rather than cloying. Thanks to its fortified nature and extended aging in cask, it is remarkably stable and can be enjoyed over many weeks after opening; well-stored bottles can easily hold for several years, gradually developing further complexity in bottle.

Production
Sourced from vineyards linked historically to the renowned Macharnudo terroir near the road from Jerez to Trebujena, the grapes for this wine draw on classic albariza soils—chalky, white, and moisture-retentive—known for producing some of the most expressive Palomino and Pedro Ximénez in the Jerez-Xérès-Sherry area. The Palomino is typically vinified into a traditional base wine and aged oxidatively in seasoned casks, while sun-dried Pedro Ximénez grapes yield an intensely sweet, concentrated component. These elements are then carefully blended and matured using the traditional solera and criadera system in the bodega on Calle Justicia, allowing younger wines to be progressively enriched by older stocks and ensuring depth, consistency, and a harmonious cream style that reflects generations of know-how.

Food & Serving
This cream-style fortified wine is superb with classic desserts such as almond tart, crème brûlée, bread-and-butter pudding, fruitcake, or blue cheeses like Roquefort and Stilton. It also shines alongside Spanish flan, churros with chocolate, and even lightly spiced pâté or foie gras, where its sweetness and acidity provide a luxurious contrast. Serve slightly chilled, around 10–12°C (50–54°F), to emphasize freshness while keeping the texture plush. Decanting is not necessary, but pouring the first glass and giving it a few minutes in the glass helps the more subtle nutty and dried-fruit aromas unfurl fully.

Bodegas León Domecq is a century-old house rooted in one of the most authentic quarters of Jerez, with its cellars established since 1850 at Calle Justicia 28. The bodega’s history is intertwined with the former ‘La Compañía’ vineyard, once among the most important in the Jerez-Xérès-Sherry appellation and closely associated with the famed Macharnudo zone, long regarded as a source of some of the region’s finest base wines. As heirs to the pioneering spirit of figures like Don Tomás Domecq Rivero—a key personality in transforming sherry into one of the world’s great wines—the family has preserved and revived an oenological treasure within their historic walls. Today, Bodegas León Domecq is seen as a guardian of traditional Jerez craftsmanship, drawing on old soleras, classic methods, and deep regional roots to produce characterful, authentic fortified wines such as Cream Señorío de Callao.
