The vineyards are cultivated with a strong respect for the environment, with low yields and meticulous work in the vines to ensure optimal ripeness and healthy berries. Harvest is carried out by hand, allowing strict selection of bunches in the vineyard and on sorting tables. In the cellar, the grapes are typically destemmed (with possible inclusion of a small portion of whole clusters in some cuvées, depending on the vintage) and undergo a gentle, temperature-controlled fermentation to extract color, aroma and fine tannins without harshness. The wine is then aged in French oak barrels—usually a mix of new and used oak—to add texture and complexity, while preserving the purity of fruit and the mineral signature of Nuits-Saint-Georges.
