Sourced from multiple carefully selected parcels in Gevrey-Chambertin, this wine reflects the village’s classic terroir: predominantly limestone and clay soils that deliver both depth and a clear mineral spine. The vines are farmed with close attention to ecological balance, with low yields to concentrate flavor and preserve the character of each site. Grapes are harvested by hand at optimal ripeness, with careful sorting to ensure only the healthiest berries make it into the cuvée. Vinification follows a traditional Burgundian approach: partial whole-cluster fermentation depending on vintage conditions, a gentle extraction through pump-overs and punch-downs, and a spontaneous fermentation with indigenous yeasts. The wine is then aged in French oak barrels—only a proportion new—to enhance texture and aromatic complexity while maintaining transparency to the terroir.
