Tasting Notes
The wine shows a vivid ruby-red colour, with an aromatic nose of ripe cherries, violets and fresh balsamic nuances. On the palate, it is elegant yet generously structured, marked by a pronounced mineral character and a subtle savoury quality. Fine tannins provide definition, while the lively acidity carries the wine through to a persistent, refreshing finish. Although approachable in its youth, the wine’s structure and balanced acidity give it further ageing potential over the next several years. It should develop added savoury and earthy complexity with time while retaining its characteristic freshness.

Production
The Sangiovese grapes are cultivated organically in Podere Le Ripi’s vineyards on the hills of Montalcino, where schist and limestone soils contribute a distinctive mineral and saline edge. Yields are kept low to encourage concentration and clarity of flavour, and the grapes are carefully harvested by hand. Fermentation and maceration take place in cement tanks for approximately 20 days, allowing for thorough but balanced extraction. The wine is then matured for an extended period in large oak casks, refining the tannins while preserving the purity of the Sangiovese fruit.

Food & Serving
A natural partner for game, roasted meats, braised dishes and mature cheeses, this Rosso di Montalcino also works beautifully with rustic Tuscan cuisine, such as pappardelle with wild boar ragù. Serve at approximately 16–18°C. Decanting is not essential, but a brief decant of 30–60 minutes can help open the wine and reveal its balsamic, floral and mineral nuances, particularly when enjoyed in its youth.
