It stands out as a modern, fruit-driven Saint-Émilion that still respects the classic elegance and structure that made its big sibling a Parker 100-point icon.

Tasting Notes
In the glass, Le Merle de Péby-Faugères 2021 shows a deep, vibrant ruby core with youthful purple highlights, signaling both concentration and freshness. The nose is expressive and layered, offering ripe black cherry, wild raspberry and plum, lifted by notes of violets, graphite and a touch of fresh tobacco leaf. Subtle hints of vanilla bean, cocoa and sweet spice from French oak round out the bouquet without overpowering the fruit. On the palate, the wine is medium to full-bodied with a supple, velvety texture that reflects its Merlot dominance. Juicy red and black fruits—think morello cherry, cassis and blackberry—are supported by fine-grained tannins and a lively, saline freshness typical of the clay-limestone slopes of Saint-Émilion. Discreet oak adds layers of mocha, cedar and baking spice, leading to a long, elegant finish with a mineral edge. Enjoyable in its youth for its brightness and charm, the 2021 vintage should evolve gracefully over the next 8–12 years, gaining complexity and softer tannins with time in the cellar.

Production
Le Merle de Péby-Faugères is sourced from select Merlot parcels planted in a single block on the historic clay-limestone slopes of Saint-Émilion, a terroir renowned for producing Merlot of remarkable finesse and aromatic intensity. The vines benefit from excellent drainage and a favorable exposure, allowing for optimal ripening even in cooler vintages like 2021. Grapes are typically harvested by hand at optimal maturity, with rigorous sorting to retain only perfectly healthy, ripe berries. Vinification is carried out in temperature-controlled vats to ensure a gentle extraction of color, aroma and tannin, followed by élevage in French oak barrels to add structure and complexity while preserving the purity of the fruit and the distinct mineral signature of the site.

Food & Serving
This Saint-Émilion Grand Cru is a natural match for classic dishes such as roast lamb with herbs, entrecôte with jus, or duck breast with a red wine reduction. It also works beautifully with richer poultry dishes, mushroom risotto, truffled pasta, and hard or semi-hard cheeses like Comté, Tomme de Savoie or aged Gouda. Serve at 16–18°C (about 60–64°F) to highlight its aromatics and balance. A brief decant of 45–60 minutes will help open up the bouquet and soften the young tannins, especially in its first years, though the wine can be enjoyed without decanting if allowed to breathe in the glass.

Château Péby Faugères is one of the standout estates within the Vignobles Silvio Denz portfolio, a right bank jewel that has rapidly climbed into the top tier of Saint-Émilion. Created in 1998 and named in tribute to former owner Pierre-Bernard Guisez—nicknamed “Péby”—the estate focuses on the very best Merlot parcels from Faugères, planted in a single block on old clay-limestone soils. The château’s 2000 vintage, dubbed the “Legend of the Future,” propelled Péby Faugères into the spotlight when it was listed among Robert Parker’s 24 greatest Bordeaux wines and later achieved a perfect 100/100 score in The Wine Advocate for the 2005 vintage. Today, under the guidance of Silvio Denz, Château Péby Faugères is recognized for its meticulous vineyard work, precision winemaking and consistently high critical acclaim, helping to define the modern, luxurious style of Saint-Émilion while remaining deeply rooted in its historic terroir.
