Tasting Notes
In the glass, this 2010 Secolo Novo pours a luminous, straw-gold hue with an ultra-fine, persistent bead that testifies to extended aging on the lees. The nose is complex and layered, opening with notes of ripe citrus, green and yellow apple, and Williams pear, followed by toasted brioche, almond, hazelnut, and delicate hints of white flowers, chalk and subtle spice.
On the palate, the wine is bone dry and incisively fresh, yet richly textured—a classic combination in top Franciacorta. The mousse is creamy and elegant, carrying flavors of lemon zest, baked apple, quince and stone fruit, intertwined with pastry cream, roasted nuts and a distinctly mineral, saline backbone. The finish is long, precise and mouthwatering, with a chalky grip and lingering notes of citrus peel and toasted bread. Thanks to the 2010 vintage character and the extended maturation, this Riserva is already beautifully expressive, but it still has significant aging potential; properly stored bottles can continue to evolve gracefully for another 5–8 years, developing deeper nutty and honeyed nuances.
Production
Secolo Novo is sourced from select Chardonnay parcels in the heart of Franciacorta, in Lombardy, where glacially formed soils rich in limestone, pebbles and morainic deposits provide excellent drainage and impart a distinctive mineral edge to the wines. The vines are tended with meticulous care, and the grapes are harvested by hand at optimal ripeness to preserve acidity and aromatic precision. After gentle pressing, the base wines are fermented in temperature-controlled conditions, with part of the cuvée often raised in stainless steel and, depending on the vintage, a portion in oak to add complexity and texture. The assemblage then undergoes secondary fermentation in bottle according to the traditional method (Metodo Classico), followed by an extended period of maturation on the lees far beyond the minimum required for Franciacorta Riserva. No dosage is added at disgorgement, resulting in a Brut Nature style that transparently reflects both terroir and vintage.
Food & Serving
This refined Franciacorta Brut Nature is a superb match for elegant seafood dishes—think oysters, scallops, lobster, and refined crudo or sashimi—where its minerality and tension shine. It also pairs beautifully with caviar, sushi, shellfish pastas, delicate fish in beurre blanc, and refined vegetable dishes such as asparagus or artichoke risotto. For cheese, opt for aged Parmigiano Reggiano, Grana Padano or mild, semi-hard alpine styles. Serve well-chilled, ideally at 8–10°C (46–50°F), in a white wine or generous sparkling wine glass to allow the bouquet to open fully. A brief 10–15 minutes in the glass is usually sufficient for the wine to express itself; extended decanting is not necessary, though opening the bottle a little ahead of serving can help reveal its full aromatic complexity.
