Made from Chardonnay, Pinot Bianco and Pinot Nero, this non-vintage cuvée is bottled with zero dosage, allowing the pure character of the terroir and the base wines to shine through. As a modern benchmark for dry, gastronomic Franciacorta, Audens reflects both the innovation and deep-rooted tradition of one of the appellation’s most respected family estates.

Tasting Notes
In the glass, this Franciacorta shows a bright, luminous straw-yellow hue with fine, persistent bubbles that form a delicate mousse and steady bead. The nose is refined and vibrant, opening with fresh citrus—lemon zest and grapefruit—layered over green apple, pear skin and white flowers, with subtle notes of brioche, toasted hazelnut and wet stone emerging as it warms. On the palate, Audens Dosaggio Zero is bone dry, tense and linear, with a pronounced mineral backbone. The Chardonnay lends precision and citrusy freshness, Pinot Bianco contributes texture and floral nuance, while Pinot Nero adds depth and structure. Expect flavors of crisp apple, lemon curd, almond, and a hint of savory salinity, all wrapped in a creamy yet focused mousse. The finish is long, chalky and mouthwatering, making it a particularly food-friendly style. In magnum format, this cuvée benefits from slower, more graceful evolution and can age beautifully for 5–8 years from release, gaining complexity, gentle toastiness and honeyed notes while retaining its core freshness.

Production
Sourced from carefully selected vineyards in the rolling hills of Franciacorta in Lombardy, this wine reflects a mix of calcareous and morainic soils that naturally enhance acidity and minerality—key components of world-class sparkling wine. The grapes are harvested by hand at optimal ripeness to preserve tension and aromatic purity, with each variety and parcel vinified separately. Gentle pressing yields only the finest must, which is fermented at controlled temperatures in stainless steel, and in some cases partially in oak, to build texture without sacrificing finesse. After blending, the base wine undergoes a traditional second fermentation in bottle (Metodo Classico), followed by an extended period of lees aging to develop complexity and fine mousse. True to its “Dosaggio Zero” designation, no dosage (additional sugar) is added at disgorgement, resulting in an unadorned, terroir-driven expression.

Food & Serving
This ultra-dry Franciacorta is an excellent partner for refined, savory dishes where precision and freshness matter. Pair it with oysters, crudo, sashimi, or carpaccio of sea bass, as well as delicate shellfish, grilled prawns and simply prepared white fish. It also works beautifully with sushi, tempura, goat cheese, aged Parmesan, and light poultry dishes with citrus or herb accents. Serve well chilled at around 6–8°C (43–46°F); in magnum, a slightly wider-bowled sparkling or white wine glass helps the aromas unfold. Decanting is not necessary, but opening the bottle 10–15 minutes before serving and letting it sit in the glass will allow the more subtle brioche and nutty tones to emerge.
