L'Aventure Optimus 2019

L’Aventure Optimus 2019 is a bold, Rhône-meets-Bordeaux style red from Paso Robles, crafted by the visionary Stephan Asseo and built around a striking blend of Syrah, Cabernet Sauvignon and Petit Verdot. It was the first wine created at L’Aventure Estate, making it a signature release that captures both the freedom and precision behind Asseo’s winemaking philosophy.

Tasting Notes
In the glass, it shows a deep, vibrant ruby color that hints at its power and concentration. The nose is generous and layered, offering cassis, blueberry, dark plum, dried violets, bay leaf, licorice, pepper and a subtle smoky edge. The palate is full-bodied, polished and beautifully seamless, with ripe dark fruit framed by freshness, fine tannins and impressive length. There’s both richness and lift here, making it immediately appealing now, while still promising excellent development over the next decade or so.

Production
All fruit comes from the L’Aventure Vineyard in Paso Robles, where the vines are farmed sustainably and shaped by chalky soils and maritime influence. Stephan Asseo ferments the wine in barrel, then ages it for 14 months in French oak, with 89% new barrels, and bottles it without filtration to preserve purity and texture.

Food & Serving
This is an excellent match for grilled ribeye, braised short ribs, lamb chops, venison, or slow-cooked dishes with herbs and dark sauces. Serve at around 16–18°C, and consider decanting for at least an hour to let the aromatics and structure fully open up.

L’Aventure was founded in 1998 by Stephan Asseo, a French winemaker who left behind the restrictions of Bordeaux to pursue a more自由 approach to blending and vineyard expression. After traveling the world to study great terroirs, he settled in Paso Robles, where his Rhône-Bordeaux inspired wines quickly earned a reputation for originality and quality, supported by strong critical acclaim year after year.
