In the cellar, fermentation takes place in temperature-controlled vats, parcel by parcel, to preserve the nuanced expression of each plot. The wine is then aged in French oak barrels, with a judicious use of new oak, to bring polish and complexity without overwhelming the purity of fruit and the signature clay-and-earth character of the estate.
