Tasting Notes
In the glass, the wine typically shows a deep, concentrated ruby-garnet colour with only gradual signs of maturity. The nose is layered and complex, unfolding with blackcurrant, blackberry, cedar, graphite, tobacco, and subtle earthy spice, alongside the earthy, savoury tones that come with age. On the palate, it is full-bodied and tightly structured, with dense dark fruit wrapped in firm but refined tannins. The wine is known for its balance of richness and freshness, finishing long with notes of cassis, lead pencil, smoke, and forest floor. The 2000 vintage has excellent ageing potential and, depending on storage, can continue to evolve gracefully for many years.

Production
Château Latour’s vineyards sit on the gravel-rich soils of Pauillac, close to the Gironde estuary, where the terroir provides excellent drainage and helps ripen Cabernet Sauvignon with exceptional intensity and finesse. The estate is known for careful parcel selection, meticulous vineyard work, and hand harvesting, ensuring only the best fruit is used. Vinification at Latour is traditionally precise and restrained, with fermentation designed to preserve purity and structure, followed by extended ageing in French oak barrels to build complexity and longevity. The result is a wine shaped by both the gravelly Médoc terroir and the estate’s uncompromising approach to quality.

Food & Serving
This wine pairs beautifully with classic dishes such as grilled ribeye, roast lamb, beef Wellington, duck confit, or game served with rich sauces. It should be served at around 16–18°C, and decanting for 1–2 hours is recommended if the bottle is still youthful or to help open the aromatics in an older bottle.
