Kissinger-Bähr Sauvignon Blanc Bio 2024 Magnum is a precise, terroir-driven expression of Sauvignon Blanc from Rheinhessen, made in very limited quantity and bottled in magnum for added freshness and development potential. Moritz Kissinger places origin at the center of his winemaking, and this wine shows that philosophy clearly with its mineral core, subtle smoky reduction, and finely balanced fruit.
Tasting Notes
Pale straw in the glass, this Sauvignon Blanc opens with a restrained but expressive nose: flinty reduction, fresh herbs, wildflowers, green apple, and pear, with the classic Sauvignon aromatics kept beautifully in check. On the palate it is crisp, linear, and highly animated, driven by lively acidity, a subtle phenolic grip, and a distinct mineral backbone that gives the wine both tension and clarity. The magnum format and careful élevage suggest excellent aging potential, allowing the wine to gain complexity over the next several years.
Production
The grapes come from 26-year-old vines rooted in loess and limestone, soils that lend both texture and a pronounced mineral imprint. After harvest, the wine spent 12 months in barrel followed by six months in stainless steel before being bottled unfiltered, a method that preserves purity while adding depth and nuance. Only 1,058 bottles and 48 magnums were produced, underscoring its small-scale, artisanal character.
Food & Serving
Serve chilled at around 8–10°C and, if possible, give it a short time in the glass to open up. It works beautifully with goat cheese, asparagus, fresh seafood, sushi, herb-roasted chicken, or vegetable dishes with bright acidity; decanting is not usually necessary, though a brief splash into a carafe can help if you want to soften the wine’s reductive edge.
