Kissinger-Bähr Blanc de Blancs Brut Nature Bio 2021 Magnum white

Kissinger-Bähr Blanc de Blancs Brut Nature Bio 2021 is a refined German sparkling wine made exclusively from Pinot Blanc (Weißburgunder) and presented in an impressive Magnum format. With its extended lees ageing, zero dosage and organically farmed fruit, it offers a precise, dry and highly characterful expression of Rheinhessen. The cool, wind-exposed site at Uelversheimer Tafelstein provides an ideal foundation for elegant sparkling wine.

Tasting Notes
The wine appears bright and delicately coloured, with a fine, persistent mousse. On the nose, it combines toasted hazelnut and freshly baked tarte tatin with subtle notes of salted caramel, creating a wonderfully complex yet fresh aromatic profile. On the palate, the Blanc de Blancs is refined, finely structured and energetic. Its texture is both juicy and lightly herbal, while vibrant acidity and considerable tension give the wine impressive drive and length. As a Brut Nature with no added dosage, it finishes exceptionally dry and focused. It is already highly expressive, but its structure and extended lees ageing should allow it to develop further complexity over the next several years when stored well.

Production
The Pinot Blanc comes from approximately 27-year-old vines planted at the top of the Uelversheimer Tafelstein in Rheinhessen, an open and cool site exposed to the wind. The grapes are matured partly in wood and partly in stainless steel, with 60% aged in wooden casks and 40% in stainless-steel tanks. Following more than 30 months on the lees, the wine is bottled unfiltered as Brut Nature, preserving its precise, textured and uncompromisingly dry style.

Food & Serving
Serve well chilled at around 8–10°C. Its freshness and nutty, lightly toasted character make it an excellent partner for oysters, shellfish, smoked trout, sashimi and delicate fish dishes. It also works beautifully with roasted poultry, creamy vegetable dishes and mature hard cheeses. Decanting is not necessary, although opening the Magnum a little in advance can allow its layered aromas to unfold.
