Description

Kettmeir Alto Adige Metodo Classico Pas Dosé 2022 is a pure, Chardonnay-led sparkling wine made by the traditional method, with no dosage added after disgorgement. Its long lees ageing and mountain-grown origins give it a distinctive expression of Alto Adige’s crisp, alpine character.

Tasting Notes
Bright straw-yellow in the glass, it shows a fine, persistent stream of bubbles. The bouquet combines notes of broom, winter sweet, banana and mango with delicate hints of yeast.

Production
The Chardonnay comes from vineyards in Pochi di Salorno, at 520–550 metres above sea level. Limestone-rich soils with clay and traces of porphyry, together with the mountain climate, contribute to the wine’s defined structure and clean finish. The grapes are harvested in August and gently pressed; the first fermentation takes place in temperature-controlled stainless-steel tanks. After the second fermentation in bottle, the wine spends at least 38 months on its lees. At disgorgement, it is topped up with the same wine, with no expedition liqueur added.

Food & Serving
Its taut, lively profile makes a natural match for shellfish, caviar and Japanese sushi. Serve well chilled, around 6–8°C. Decanting is generally unnecessary for this style; open shortly before serving to preserve its fine bubbles.

Kettmeir was founded in Alto Adige in 1919 and is a long-established producer in the region. The winery’s Pas Dosé reflects the area’s alpine setting through its Chardonnay fruit, freshness and precise, dry style.
