Tasting Notes
In the glass, Bedoba Saperavi shows a dense, inky, dark-purple color that immediately signals its depth. The nose opens with layered aromas of blackberries, blackcurrants, ripe plums, and dark cherries, followed by a savory streak of herbs, pepper, and warm baking spices. The palate is generous, velvety, and concentrated, with plenty of ripe dark fruit and a supple, rounded texture. Firm but polished tannins provide structure without harshness, giving the wine both balance and energy. This is a wine with good aging potential, where its dense fruit and spice should continue to integrate beautifully over the coming years.

Production
Produced from the native Georgian Saperavi grape, Bedoba is made in Kakheti, one of Georgia’s most important winegrowing areas, where the variety thrives in a climate well suited to deeply colored, characterful reds. Fermentation and maturation take place partly in traditional clay qvevri amphorae buried underground and partly in American oak barrels, combining ancient Georgian technique with a touch of modern influence. This approach helps preserve the wine’s authentic regional identity while adding depth, texture, and spice.

Food & Serving
This is a natural match for grilled or slow-roasted meats, lamb, beef stews, game, and richly seasoned dishes, as well as hard cheeses and hearty vegetarian plates with mushrooms or roasted root vegetables. Serve it slightly below room temperature, around 16–18°C, and consider decanting for 30–60 minutes to let the aromas and structure open fully.
