Tasting Notes
In the glass, the 2021 Goldloch Kabinett shows a pale, shimmering lemon hue with green reflections, hinting at both youth and vibrancy. The nose opens with a herbaceous-spicy lift—think wild herbs, white blossoms and crushed slate—wrapped around fine exotic nuances of lime, passion fruit and a touch of ripe stone fruit. On the palate, this is a quintessential “Kabi”: light on its feet yet full of flavor, with a beautifully judged interplay of sweetness and racy acidity. Juicy citrus, white peach and subtle tropical notes are underpinned by a precise, saline minerality that keeps everything thrillingly fresh and animating. Dorsheimer Goldloch is a steep, south-facing vineyard in the Nahe, famed for its quartzite-rich, weathered soils that deliver both ripe fruit and striking minerality. The exposure allows for optimal sun ripening while cool Nahe nights preserve acidity and aromatic precision, a combination ideal for Kabinett-style Riesling. Grapes for this Versteigerungswein are typically hand-harvested in small parcels at perfect physiological ripeness, with careful selection in the vineyard to ensure only pristine fruit is used. In the cellar, Sebastian Schäfer favors a gentle, minimalist approach: slow, cool fermentation—often in stainless steel and/or traditional large neutral casks—preserves the purity of fruit and the finely etched structure, followed by aging on the lees to enhance texture and nuance before bottling for the VDP auction.
