Production

Vines are typically low-yielding and carefully tended, with harvesting done by hand in the late season to ensure optimal phenolic ripeness. In the cellar, Joaquin follows a minimalist, traditional approach: extended macerations extract depth without harshness, and fermentation proceeds with careful temperature control, often using native yeasts. The wine is then matured for an extended period in large, neutral oak casks and/or old barrels to refine the powerful tannic structure without masking the varietal and territorial character, followed by long bottle aging before release as a Riserva.
