Tasting Notes
In the glass, Solessence Nature Élevage Prolongé shows a pale lemon-gold hue with fine, persistent bubbles that form a delicate mousse. The nose is precise and expressive, offering notes of lemon zest, green apple, white peach, and pear, layered with chalky minerality, hints of brioche, toasted almond, and subtle white flowers.
On the palate, it is laser-focused and dry, with a taut, vibrant acidity that frames citrus and orchard fruit flavors, alongside savory, saline and chalk-inflected undertones. The Chardonnay brings tension and elegance, Pinot Meunier adds supple fruit and mid-palate texture, while Pinot Noir contributes structure and gentle red-fruited nuance. The extra time on the lees gives a fine, creamy texture and complexity, balancing the absence of dosage. Long, pure, and mouthwatering on the finish. Production
Grapes for Solessence Nature Élevage Prolongé are sourced from multiple villages in the Côteaux Sud d’Épernay and surrounding areas, where chalk and limestone-rich soils with clay and sand lenses deliver both tension and texture. Vines are farmed with great attention to soil health, often along organic or sustainable lines, with careful, largely manual work in the vineyard to preserve fruit quality and terroir character. Harvest is typically carried out by hand at optimal ripeness, followed by gentle pressing of whole clusters. The base wines are vinified parcel by parcel, with a portion fermented and aged in neutral oak to add complexity and breadth, and the rest in stainless steel to preserve freshness. Extended aging on the lees (élevage prolongé) builds texture, aromatic complexity, and finesse. The wine is bottled for secondary fermentation and rests extensively sur lattes before disgorgement, with no dosage added (Brut Nature), allowing the natural balance of the wine and the character of the terroir to shine unmasked.

This Brut Nature Champagne is a superb match for clean, precise dishes where freshness and texture are key. Think oysters, shellfish platters, sashimi, ceviche, and simply grilled fish, as well as lightly dressed crab or scallop dishes. It also pairs beautifully with goat’s cheese, sushi, tempura, and delicate vegetable-based starters, and can cut through the richness of fried or creamy dishes. Serve well-chilled at around 8–10°C (46–50°F).
