Velut Champagne Premier Temps Brut is a refined grower Champagne that showcases the chalk-rich slopes of Montgueux in the southern Champagne region. Crafted from 80% Chardonnay and 20% Pinot Noir, it mirrors the exact proportions of the estate’s vineyard plantings, offering a true snapshot of Jean Velut’s terroir. This non-vintage cuvée is designed as a vibrant, fruit-driven aperitif Champagne, yet holds enough depth and character to carry through a full meal.

Tasting Notes
In the glass, Premier Temps Brut presents a pale, luminous gold color with fine, persistent bubbles that form a delicate mousse. On the nose, it opens with generous aromas of ripe peach, pineapple and citrus—think lemon zest and a touch of grapefruit—layered with hints of white flowers and a subtle chalky minerality. The palate is lively and refreshing, with a bright, citrus-driven acidity that keeps the wine light on its feet. Juicy stone-fruit notes of peach and nectarine are joined by tropical nuances, underpinned by a clean, mineral backbone and a dry, elegant finish. The dosage is well-judged, allowing the fruit to shine without feeling heavy or sweet. While intended for early enjoyment as a fresh, convivial Champagne, it can comfortably age for a few years in bottle, gaining a bit more creaminess and complexity over time.

Production
Sourced from the distinctive chalk and limestone soils of Montgueux in the Champagne region, Velut Premier Temps Brut is very much a child of its terroir. The vineyards benefit from good sun exposure and cool continental influences, which help Chardonnay achieve ripeness while preserving tension and aromatic purity. Grapes are harvested by hand to ensure careful selection in the vineyard, then gently pressed to obtain the finest juice. Fermentation takes place in temperature-controlled vessels to retain the wine’s bright fruit character, after which the base wines are blended from different parcels and reserve wines to achieve a consistent house style. The cuvée is then bottled for secondary fermentation and aged on its lees, enhancing texture and complexity before disgorgement and a balanced Brut dosage.

Food & Serving
This Champagne is a superb aperitif, ideal with light canapés, oysters, shrimp cocktail, smoked salmon blinis or a simple plate of gougères. It also pairs beautifully with sushi and sashimi, ceviche, fresh goat cheese, grilled white fish or delicate poultry dishes with citrus-based sauces. Serve well-chilled at 8–10°C (46–50°F) in a tulip-shaped Champagne glass to capture both aroma and finesse. Decanting is not necessary, but opening the bottle a few minutes before serving allows the wine to unfurl its fruit and floral notes.
