Grapes are typically harvested by hand to ensure only the healthiest clusters reach the press, preserving delicacy and purity of fruit. After gentle pressing, the base wines are fermented in temperature-controlled conditions, then carefully blended across different parcels and vintages to achieve Jean Valentin’s signature style. The wine undergoes a traditional second fermentation in bottle and ages on its lees, developing its fine mousse, creamy texture, and subtle autolytic notes before disgorgement and a Brut-level dosage.
