Tasting Notes
Pale in the glass with a subtle green hue, this wine opens with a bright, focused nose of citrus, grapefruit, and white flowers, lifted by a gentle herbal edge and a chalky, limestone minerality. The palate is slim, lively, and beautifully linear, with notes of lemon, lime, and green apple carried by crisp acidity and a dry, energetic finish. A brief period on lees adds a touch of texture and depth without compromising its precision. Its vibrant structure suggests very good short- to medium-term aging potential, though it is already highly enjoyable for its clarity and freshness.

Production
Les Caillottes comes from parcels around Bué and Amigny in the Loire Valley, where the small, limestone-rich stones known as caillottes help reflect light and promote even ripening while preserving the wine’s tension. The grapes are harvested with care to maintain freshness and purity, then vinified to emphasize the clean varietal expression of Sauvignon Blanc. After fermentation, the wine spends a short time on lees to build subtle breadth and complexity.

Food & Serving
This is an excellent match for goat’s cheese, oysters, shellfish, sushi, grilled white fish, and fresh salads with herbs or citrus. Serve chilled at 8–10°C to best highlight its aromatic lift and mineral cut. Decanting is not necessary.
