Jaffelin Bourgogne Blanc Chardonnay Cuvée des Chanoines de Notre Dame 2023 is a refined and classically styled white Burgundy from Maison Jaffelin in Beaune. Inspired by the house’s historic cellars beneath Notre-Dame de Beaune, this cuvée combines hand-harvested Chardonnay, careful craftsmanship, and a subtle use of French oak to deliver freshness, balance, and layered elegance.
Tasting Notes
In the glass, the wine shows a bright, pale golden colour that immediately signals its Bourgogne character. The nose opens with citrus, ripe apple, and mirabelle plum, lifted by white flowers and framed by delicate hints of toasted nuts and a touch of butter from its élevage in oak.
On the palate, it is fresh and harmonious, with lively acidity, soft mid-palate weight, and a clean, mineral finish. The oak is well judged, adding depth and finesse without overpowering the fruit. While already very approachable, it should also develop nicely over the next few years, gaining added complexity and texture.
Production
The Chardonnay comes from selected parcels across Bourgogne and is harvested by hand to preserve fruit quality and precision. Maison Jaffelin focuses on balance and freshness in the cellar, followed by 11 months of maturation in French oak barrels, including a small proportion of new oak, to enhance structure and subtle aromatic complexity. The result is a wine that reflects both the character of the region and the house’s elegant, restrained style.
Food & Serving
This wine is a versatile partner for dishes such as roast chicken, creamy seafood pasta, poached fish, shellfish, and mild soft cheeses. It is best served cool, around 10-12°C, to keep the aromas bright and the palate vibrant. Decanting is not necessary, though a short aeration can help if the wine is served very young.

Maison Jaffelin is one of Burgundy’s oldest négociant houses, based in Beaune since 1816, with its cellars located in the historic Caves du Chapitre beneath Notre-Dame de Beaune. Known for its small-scale cuvées and emphasis on terroir-driven elegance, the house has built a reputation for combining tradition with precision. A modernisation in 2004 brought updated facilities while preserving classic methods, and under oenologist Marinette Garnier, Jaffelin has continued to refine its style with a focus on freshness, finesse, and authenticity.
