Tasting Notes
In the glass, this Champagne shows a vivid, deep salmon to light ruby hue, with a fine and persistent bead of bubbles that speaks to careful craftsmanship and extended aging on lees. The nose opens with wild red berries—think raspberry, crushed strawberry, and redcurrant—wrapped in notes of blood orange, pomegranate, and rose petals, with subtle undertones of brioche, chalk, and a hint of spice. On the palate, the Extra Brut dosage keeps the wine taut and precise, allowing the natural fruit concentration to shine without feeling sweet. Juicy red cherry, raspberry, and cranberry are layered with citrus zest, white pepper, and a faint savory, almost herbal note that adds complexity. Sourced from Grand Cru parcels in the heart of the Champagne region, Jacques Rousseaux’s vineyards sit on classic chalk and limestone-rich soils that lend tension, salinity, and finesse to the wines. The Chardonnay and Pinot Noir are harvested by hand at optimal ripeness to ensure careful berry selection and preserve the purity of fruit. This rosé is made by the traditional saignée method, where the juice is drawn off after a short maceration on the Pinot Noir skins, giving both its deep color and subtle tannic structure. Fermentation typically occurs in temperature-controlled stainless steel (and in some cases small oak, depending on the cuvée philosophy), followed by extended aging on the lees to build texture and complexity. The wine is finished with an Extra Brut dosage, highlighting the natural character of the fruit and terroir rather than sweetness.

Food & Serving
This is a food-oriented Champagne rosé that pairs beautifully with dishes that can stand up to its structure and intensity. Think tuna tartare, salmon sashimi, or seared scallops; charcuterie and cured meats; roast duck with cherries; grilled salmon; or even lightly spiced Asian cuisine. It also works wonderfully with mature cheeses such as Comté or aged goat cheese.
