Tasting Notes
In the glass, the wine is dense and nearly opaque, with violet highlights hinting at its youthful intensity. The nose opens dramatically with dark berries, blackcurrant, cherry, cocoa, cedar, espresso, violets, and a subtle smoky mineral note. The palate is monumental yet beautifully controlled: rich layers of dark fruit unfold over a velvety texture, while the tannins are polished and finely integrated. The finish is long and persistent, carrying spice, chocolate, and fresh mineral nuance. This is a wine built for the long haul and should age majestically for decades.

Production
Ark Vineyard Cabernet Sauvignon is made with meticulous hand selection at every stage, from the sorting of individual clusters to fermentation in small vessels designed to preserve the character of the fruit. The wine is then matured for up to 30 months in new French oak barrels crafted from the tight-grained, central portion of the wood and seasoned for three years before use, adding structure and complexity without overwhelming the wine’s natural intensity.

Food & Serving
Best served with richly flavored dishes such as prime rib, filet mignon, braised short ribs, or truffle-infused dishes, as well as aged hard cheeses. Serve at 16–18°C and allow the wine to breathe; decanting for 1–2 hours is recommended to help it open up and reveal its full aromatic range.
