Hubert Lignier’s Morey St. Denis Clos Baulet 1er Cru 2014 is a beautifully poised Burgundy from one of Morey’s smallest and most characterful premier cru sites. Sourced from a tiny, well-drained parcel of sandy, stony soils, it combines seductive red fruit with polish, lift, and the kind of quiet depth that has made the domaine such a respected name in the Côte de Nuits.

Tasting Notes
In the glass, this Pinot Noir shows a clear, bright ruby color with the fine transparency typical of great Burgundy. The nose is elegant and expressive, with sweet strawberry, red cherry, and subtle floral notes, followed by hints of spice, earth, and a mineral edge. On the palate it is silky and refined, offering a graceful balance of ripe fruit, freshness, and gentle structure. The wine feels lithe rather than heavy, yet there is real concentration beneath the finesse. The finish is long, precise, and polished, with enough depth to develop beautifully in bottle over the next several years. This is a wine that should reward medium-term cellaring, gaining complexity and nuance as the fruit slowly folds into more savory, earthy tones.

Production
Clos Baulet is a very small premier cru site in Morey-Saint-Denis, planted on sandy and stony soils that drain quickly and naturally limit vigor. That combination helps produce fruit with concentration, aromatic lift, and a finely etched texture, while the Morey terroir adds its signature depth and structure. Hubert Lignier works with a traditional approach focused on clean fruit expression and vineyard character, without the use of pesticides or herbicides. The estate’s style is rooted in careful farming and restrained vinification, aiming to preserve purity, balance, and the natural imprint of each parcel. The result is a wine that feels both precise and generous, with the site’s small scale and distinctive soils clearly reflected in the glass.

Food & Serving
This is a versatile Burgundy for refined dishes such as roast duck, quail, mushroom risotto, veal, or poultry with herbs. It also pairs well with soft cheeses and dishes featuring earthy ingredients like truffles or wild mushrooms. Serve at around 16–18°C, and if opening young, give it a short decant of 30 minutes to an hour to let the aromatics unfold.

Hubert Lignier is a long-standing family domaine in Morey-Saint-Denis, founded in 1880 when Jacques Lignier acquired vineyards in the heart of the Côte de Nuits. Today the estate is managed by Hubert Lignier and his son Laurent, with vineyards spread across roughly nine hectares and holdings in Bourgogne, village, premier cru, and grand cru sites. The domaine is especially associated with Morey-Saint-Denis and Gevrey-Chambertin, but also produces wines from Pommard and Nuits-Saint-Georges. Known for traditional Burgundian winemaking, the estate has built a strong reputation for wines of depth, structure, concentration, and longevity. Its commitment to farming without pesticides or herbicides, combined with careful cellar work, has helped establish Hubert Lignier as one of the most respected producers in the region.
