Description
Holger Koch Grauburgunder Herrenstück 2024 is a finely crafted Pinot Gris from one of Baden’s most respected precision winemakers. Sourced from select parcels within the Herrenstück vineyard, it balances ripe, generous fruit with remarkable freshness and minerality. Raised entirely in large wooden casks, this is a serious yet inviting white that shows just how elegant Grauburgunder from volcanic soils can be.
Tasting Notes
In the glass, the wine typically shows a bright, pale straw to light gold hue, reflecting both ripeness and freshness. The nose starts out discreet and restrained, then gradually opens with air to reveal an opulent yet finely etched fruit profile: juicy yellow apple, hints of ripe pear and subtle banana peel, with a gentle touch of exotic fruit in the background. The usual nutty tones of Grauburgunder remain delicate and well-integrated rather than dominant.
On the palate, Herrenstück is dense and silky, with a light creaminess from aging in large wood, but never feels heavy or fat. A finely judged bitterness recalls blood orange and pink grapefruit zest, adding grip and structure to the mid-palate. The interplay of ripe fruit, subtle spice and stony minerality leads into a long, mouthwatering finish that invites another sip. In a good vintage, this cuvée can evolve gracefully over 3–6 years, gaining complexity, more pronounced nuttiness and additional smoky-mineral nuances.
Production
The Herrenstück parcels lie on powerful loess and loam soils overlaying ancient volcanic rock in Baden, a combination that gives both generosity and a distinct mineral tension to the grapes. Vines are carefully tended, with a strong focus on low yields and optimal ripeness, and harvesting is done by hand to ensure only perfectly healthy, concentrated fruit reaches the cellar. As with all Herrenstück white wines, the Grauburgunder is fermented and matured 100% in large traditional wooden casks, allowing for slow, gentle oxidation, fine lees contact and subtle textural development without overt oak flavor, preserving the clarity of fruit and the expression of terroir.
Food & Serving
This Grauburgunder is a versatile food wine that works beautifully with poultry in cream sauces, veal schnitzel, roasted pork, or lightly spiced dishes of Asian cuisine. Its texture and gentle bitterness also make it a fine match for richer fish preparations, such as roasted turbot, salmon, or trout with herb butter, as well as mild to medium-soft cheeses. Serve at 9–11°C to highlight its freshness while allowing the aromatics to unfurl. A short decant of 20–30 minutes, or simply giving it time in the glass, helps the initially shy bouquet open into its full, layered complexity.
