Tasting Notes
In the glass, Hibiki Harmony presents a clear, luminous amber-gold hue that hints at both delicacy and depth. On the nose, it is refined and layered: expect soft notes of honey, orange peel and apricot, interwoven with delicate floral tones, a touch of white chocolate, and gentle oak. There is a subtle incense-like quality and a whisper of mizunara (Japanese oak) that add an exotic, almost meditative character to the aroma. The palate is smooth, rounded and beautifully balanced. Sweet notes of caramel, malty richness and vanilla unfold first, followed by shades of candied citrus, light spice and a hint of toasted nuts. The mouthfeel is silky and harmonious, with no single element overpowering the others. A gentle, warming spice carries through to a long, graceful finish, marked by lingering sweetness, fine oak and a soft echo of spice. Enjoyed now, it offers immediate pleasure, and while it is not designed for long-term cellaring like a vintage spirit, an unopened bottle will easily keep and evolve subtly over several years when stored well.

Production
Hibiki Harmony is blended from a selection of malt whiskies primarily from Yamazaki and Hakushu, and grain whiskies from Chita, all part of Suntory’s esteemed distillery trio in Japan. These whiskies are aged in a variety of cask types, including American white oak, sherry casks and the prized Japanese mizunara oak, which together contribute to its layered complexity. Each component whisky is carefully matured, then meticulously selected and blended by Suntory’s master blenders to achieve a precise balance of sweetness, fruit, spice and wood. The result is a refined, approachable whisky that captures the elegance of Japanese craftsmanship in every step, from distillation to the final blend.

Food & Serving
Hibiki Harmony is wonderfully versatile at the table and in the glass. It pairs beautifully with refined Japanese dishes such as sashimi, lightly grilled fish, tempura and yakitori, where its subtle sweetness and gentle smoke complement delicate umami flavors. It also works well with soft cheeses, roasted nuts and mildly spiced dishes, and makes an elevated accompaniment to dark chocolate with citrus accents. Serve neat or with a few drops of water at around 18–22°C (64–72°F) to reveal its full aromatic range. A short rest in the glass is usually sufficient; extended decanting is not necessary, though enjoying it over a large ice cube (as a Japanese-style highball or “on the rocks”) can highlight its refreshing, citrusy side.

Hibiki is part of the House of Suntory, Japan’s pioneering whisky producer founded in 1923 by Shinjiro Torii. With its first distillery, Yamazaki, Suntory effectively launched the modern era of Japanese whisky, later adding Hakushu in the forested mountains and Chita on the coast to diversify its distilling styles. Introduced in 1989 to mark Suntory’s 90th anniversary, the Hibiki range quickly became a flagship of Japanese blended whisky and has since earned numerous international awards, including repeated high scores and trophies at major spirits competitions. Today, Hibiki is regarded as a benchmark for Japanese blending artistry, symbolizing harmony between nature, craftsmanship and time.
