Heitz Wine Cellars Martha’s Vineyard Cabernet Sauvignon 2007 is one of Napa Valley’s most celebrated single-vineyard Cabernet bottlings, drawn from the iconic Oakville site that helped define the region’s global reputation. Deeply rooted in Napa history, it reflects the house style that made Heitz a benchmark for elegant, age-worthy Cabernet Sauvignon rather than the more overtly ripe style often associated with the valley.

Tasting Notes
In the glass, it shows a garnet-red hue with striking depth. The nose is layered and classic, opening with red and dark cherries, blackcurrant, clove, mint, and the signature hints of eucalyptus that have long marked Martha’s Vineyard. With air, notes of sweet tobacco, incense, licorice, cedar, and smoke add complexity. The palate is powerful yet composed, with concentrated fruit wrapped around firm tannins and a rounded, polished texture. It feels full-bodied and intense, but balanced by freshness and a sense of restraint that gives the wine its distinctive old-school Napa character. While already expressive, it has the structure to continue evolving in bottle for many years, gaining further nuance and harmony.

Production
Martha’s Vineyard sits in the Oakville AVA, sheltered by the Mayacamas Mountains and planted on exceptionally gravelly soils that are ideally suited to Cabernet Sauvignon. The site’s well-drained terroir helps produce fruit with depth, structure, and aromatic precision. This vintage was handled with patience and a traditional approach: after fermentation, the wine spent one year in neutral oak, followed by three years in 100% new French oak, and then another year resting in bottle before release.

Food & Serving
This Cabernet Sauvignon pairs beautifully with prime rib, grilled ribeye, lamb, venison, or slow-braised short ribs, as well as aged hard cheeses. Serve at 16–18°C for the best balance of fruit, structure, and aroma. Decanting is recommended, especially if opening young, to allow the wine’s layers of fruit, spice, and cedar to fully раскрыться.

Heitz Wine Cellars was founded in 1961 by Joe and Alice Heitz and quickly became one of Napa Valley’s defining estates. Best known for pioneering single-vineyard Cabernet Sauvignon in Oakville, the winery has long been associated with a traditional, understated style that emphasizes freshness, balance, and longevity. Martha’s Vineyard, first released in 1966, remains the estate’s legendary flagship and one of the most historic Cabernet bottlings in California.
