Heitz Wine Cellars Cabernet Sauvignon 2018

Sourced from the prized Only One and Spring Valley vineyards near St. Helena, it reflects the house style beautifully: refined, age-worthy, and rooted in one of Napa’s great winemaking traditions.

Tasting Notes
In the glass, it shows a deep, concentrated color with the kind of dark-fruited intensity you’d expect from top Cabernet Sauvignon. The nose is layered and elegant, with blackcurrant, dark cherry, blackberry, tobacco, and a subtle hint of mint adding lift and freshness. The palate is full and structured, yet more about finesse than sheer power. Ripe black fruit meets savory complexity and a warm Napa Valley richness, giving the wine a distinctly Bordeaux-inspired feel with a California sun-kissed edge. It is already highly enjoyable, but it has the structure and balance to develop beautifully over many years in bottle.

Production
This Cabernet Sauvignon is made entirely from fruit grown in the Only One Vineyard and Spring Valley Vineyard, both located close to St. Helena in Napa Valley. The wine is fermented and then aged for four years in a combination of small and large barrels, including both new and used oak, followed by an additional year of bottle aging before release. The result is a wine shaped by careful, traditional vinification and a long élevage that emphasizes purity, structure, and detail.

Food & Serving
This is an excellent match for premium cuts of beef, lamb, venison, roasted game birds, and richly flavored dishes with herbs or mushrooms. It also works well with aged hard cheeses. Serve at around 16–18°C, and consider decanting for at least one hour if drinking young to allow the wine’s aromatics and structure to खुल fully.
