Tasting Notes
In the glass, the 2005 Hauts de Pontet-Canet typically shows a deep garnet color with a mature ruby edge. The nose leans toward blackcurrant, plum, cedar, tobacco, and earthy notes, with hints of spice and dried herbs emerging as it opens. On the palate, it is structured yet polished, with ripe dark fruit, graphite, savory oak tones, and firm Pauillac tannins supporting the wine’s core. The 2005 vintage gives it excellent concentration and balance, and while it is already in a very enjoyable drinking window, it should continue to hold well for several more years.

Production
Produced in Pauillac, in the heart of Bordeaux’s Left Bank, Hauts de Pontet-Canet benefits from the gravelly terroir that gives Cabernet Sauvignon its classic structure and aromatic precision. As a second wine, it is made from younger vines and parcels that do not enter the grand vin, but it still reflects the estate’s commitment to quality and careful vineyard selection. The grapes are harvested by hand and vinified with the same attention to detail as the main wine, with fermentation and élevage designed to preserve purity of fruit and the refined Pauillac style.

Food & Serving
This wine pairs beautifully with roast lamb, beef fillet, duck breast, game, or mushroom-based dishes, as well as hard cheeses such as Comté or aged Gouda. Serve at 16–18°C, and if the bottle is opened young or showing some reduction, a short decant of 30–60 minutes can help the wine unfold.
