Tasting Notes
In the glass, Haut-Brion 2019 is an opaque, saturated garnet with a dark, almost inky core and a vivid, youthful rim. The nose opens with concentrated aromas of blackberry and ripe plum, interwoven with notes of pencil shavings, glowing embers, and creamy new oak. Subtle hints of graphite, tobacco leaf, and warm earth emerge with air, adding complexity and a distinctly Graves mineral undertone. On the palate, the wine is full-bodied, rich, and fleshy, with a textured, almost velvety attack that immediately fills the mouth. The fruit core is dense and enveloping, dominated by black and blue fruits, yet perfectly framed by broad-shouldered, muscular tannins that are already seamlessly integrated and powdery in texture. Despite the elevated alcohol, the wine retains poise and freshness, avoiding any sense of over-ripeness or heat. The finish is long, expansive, and persistent, unfurling layers of dark fruit, spice, and subtle smokiness. This 2019 has excellent aging potential and will reward cellaring for 15–30 years or more, gaining complexity, secondary nuances, and greater harmony over time.

Production
Haut-Brion sits in the Graves area of Bordeaux, on gently sloping, gravel-rich soils mixed with sand and clay that are perfectly suited to Cabernet Sauvignon, Merlot, and Cabernet Franc. The terroir’s deep gravel beds provide superb drainage and help regulate vine stress, contributing to the wine’s trademark structure and mineral depth. The grapes are harvested by hand in small parcels to ensure optimal ripeness and careful selection in the vineyard and at the sorting table. In the cellar, fermentation takes place in temperature-controlled vats, parcel by parcel, allowing precision in extracting color, tannin, and aroma. The grand vin is then aged in a high proportion of new French oak barrels, where it matures on fine lees, integrating its oak notes and building texture and complexity before final blending and bottling at the château.

Food & Serving
Haut-Brion 2019 is a superb partner for refined dishes such as dry-aged ribeye or côte de boeuf, roast lamb with herbs, venison, or game birds like pigeon and duck. It also pairs beautifully with truffle dishes, mushroom-based sauces, and aged hard cheeses such as Comté or mature cheddar. Serve at 16–18°C (60–64°F) to highlight both its richness and freshness. For current drinking in its youth, decanting for 2–3 hours is recommended to allow the wine to open fully; older, cellared bottles will benefit from a more gentle, shorter decant to preserve their aromatic delicacy.
