Haut-Bailly Cru Classé de Graves is one of Pessac-Léognan’s most respected estates, and in magnum format it offers an especially elegant way to enjoy the 2021 vintage. Known for its refined style, balance, and unmistakable sense of place, this is a wine that combines Bordeaux prestige with impressive finesse.

Tasting Notes
In the glass, the wine typically shows a deep ruby color with youthful purple reflections in its early years. The nose is often layered and graceful, with aromas of dark berries, plum, cedar, graphite, violets, and subtle toasted spice. On the palate, it is usually medium- to full-bodied, with fine tannins, bright freshness, and a polished texture that carries the fruit through to a long, precise finish. The 2021 vintage suggests a more classic, restrained expression, with strong aging potential and the ability to develop added complexity over the next 10–20 years, especially in magnum format.

Production
Haut-Bailly is located on the gravelly soils of Pessac-Léognan, where excellent drainage and a temperate climate help produce wines of purity and structure. The estate’s vineyard sites benefit from the classic Left Bank terroir, with gravel, sand, and clay contributing to the wine’s depth and aromatic lift. The grapes are typically harvested by hand and vinified with great care to preserve freshness and precision, often with parcel-by-parcel selection and traditional Bordeaux methods combined with modern temperature control. Aging generally takes place in French oak barrels, lending subtle spice and texture without overpowering the wine’s balance.

Food & Serving
This wine pairs beautifully with roasted lamb, beef tenderloin, duck breast, game birds, or dishes featuring mushrooms and truffle. It also works well with aged hard cheeses. Serve at around 16–18°C, and decant for 1–2 hours if drinking young to allow the wine to open fully.
