Tasting Notes
In the glass, the wine typically shows a deep ruby colour with bright, youthful reflections. The bouquet is layered and poised, with aromas of dark berries, plum, cedar, graphite, violets, and subtle spice, all carried by a fresh mineral lift.
On the palate, it is expected to be precise and structured, with fine tannins, lively acidity, and a polished core of black fruit, savoury earth, and toasted oak. The finish is long and composed, suggesting excellent ageing potential, particularly in magnum format, where the wine should develop gracefully over many years.
Production
Haut-Bailly comes from the gravel-rich soils of Pessac-Léognan, where excellent drainage and a temperate Bordeaux climate help produce wines of finesse and complexity. The fruit is carefully harvested, typically with strict selection to ensure only the best grapes are used, and vinification is carried out with a focus on preserving purity, balance, and terroir expression.
Food & Serving
This wine pairs beautifully with roast lamb, beef fillet, duck breast, game birds, and mushroom-based dishes, as well as aged hard cheeses. Serve at around 16–18°C, and decant for about 1–2 hours if drinking young to allow the aromas and texture to open fully.
