Description
Haut-Bailly Cru Classé de Graves 2021 is a refined Pessac-Léognan red from one of Bordeaux’s most respected historic estates. Known for its balance, poise, and classic Graves character, it offers the elegance and depth that have made Haut-Bailly a benchmark name in the region since the 19th century.
Tasting Notes
In the glass, the 2021 vintage is typically deep ruby with a bright, polished core. The nose is expected to show a graceful mix of blackcurrant, dark cherry, cedar, graphite, and subtle floral and smoky notes, with the Cabernet-driven structure framed by the estate’s signature finesse.
On the palate, it should be medium to full-bodied, combining freshness, fine tannins, and layered red and black fruit with notes of spice, tobacco, and earthy minerality. The wine is built for aging and will likely evolve beautifully over the next decade and beyond, gaining complexity and silkiness with time in bottle.
Production
Haut-Bailly sits on the gravelly soils of Pessac-Léognan, where excellent drainage and a temperate maritime climate help produce wines with both structure and elegance. The estate is traditionally farmed with great attention to detail, and the fruit is carefully harvested parcel by parcel to preserve freshness and precision. Vinification is carried out with a focus on purity and balance, typically including temperature-controlled fermentation and élevage in French oak to add depth without overshadowing the fruit.
Food & Serving
This wine pairs beautifully with roasted lamb, beef tenderloin, duck breast, game birds, or mushroom-based dishes. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the aromatics and tannins to open fully.
Producer
Haut-Bailly is one of the great historic estates of Graves, with roots dating back centuries and a reputation that has grown steadily through consistent quality and elegant winemaking. Classified as a Cru Classé de Graves, it holds an important place in Bordeaux’s fine-wine hierarchy and is widely admired for producing wines of remarkable harmony, longevity, and classical character.
