Haut-Bailly is one of the most respected names in Pessac-Léognan, and the 2008 vintage shows the estate’s classic balance and restraint. As a Cru Classé de Graves, it combines the gravelly elegance of the Left Bank with the refinement and depth that have made Haut-Bailly such a benchmark over time.

Tasting Notes
In the glass, this wine typically shows a deep garnet core with some development at the rim. The nose leans toward blackcurrant, plum, cedar, tobacco leaf, and subtle earthy notes, with a gentle floral and graphite-like lift. On the palate, it is structured yet polished, offering ripe dark fruit, firm but fine tannins, and a savoury, mineral finish that reflects its Graves origins. The 2008 vintage is known for freshness and precision, so this wine should feel composed rather than overly powerful. It has the concentration and structure to age gracefully, and well-stored bottles can continue to evolve beautifully over many years, gaining more truffle, leather, and tertiary complexity.

Production
Haut-Bailly sits on the gravel soils of Pessac-Léognan, where excellent drainage and moderate water stress help produce finely structured Cabernet-driven wines. The estate’s vineyards are farmed with close attention to vineyard selection and harvesting at optimal ripeness, with vinification aimed at preserving purity, balance, and finesse. The result is a wine that reflects both the elegance of the terroir and the estate’s meticulous approach.

Food & Serving
This is a great match for roast lamb, duck breast, beef tenderloin, game birds, or mushroom-based dishes. It also works well with aged hard cheeses and classic French cuisine. Serve at around 16–18°C, and decant for 1–2 hours if drinking now to allow the aromatics and structure to open fully.
