Tasting Notes
In the glass, it typically shows a deep ruby color with mature garnet reflections. The nose leans toward blackcurrant, cedar, tobacco leaf, and graphite, with subtle hints of earth and dried herbs adding complexity.
On the palate, the wine is medium to full-bodied, with firm but refined tannins, fresh acidity, and layered dark fruit framed by savory oak and mineral tones. The 2012 vintage should now be entering a very pleasant drinking window, though well-stored bottles can continue to develop nicely for several more years.
Production
Haut-Bages Libéral is based in Pauillac, where gravelly soils and a maritime climate provide ideal conditions for producing structured Cabernet Sauvignon-driven wines. The estate’s vineyards benefit from excellent drainage and thermal retention, helping the grapes reach full ripeness while retaining freshness. Vinification follows a traditional Bordeaux approach, with careful parcel selection, temperature-controlled fermentation, and aging in oak to build texture, complexity, and age-worthiness.
Food & Serving
This Pauillac pairs beautifully with roast lamb, beef tenderloin, duck breast, game, and dishes with mushrooms or truffle. Serve at 16–18°C and consider decanting for 1–2 hours if the bottle is still showing youthful structure, or simply to help the aromatics open up fully.
