Griffons de Pichon Baron is the second wine of the renowned Château Pichon Baron, bringing a taste of Pauillac pedigree in a more approachable style. Crafted in one of Bordeaux’s most celebrated communes, it reflects the power, structure, and precision that have made Pichon Baron a benchmark for the left bank.

Tasting Notes
In the glass, the 2021 vintage typically shows a deep ruby color with a lively, youthful rim. The nose leans toward blackcurrant, dark cherry, cedar, graphite, and a subtle floral lift, with well-integrated oak adding spice and polish. On the palate, it is medium to full-bodied with firm but refined tannins, bright freshness, and a core of black fruits framed by classic Pauillac savoriness. The finish is precise and elegant, and while enjoyable in its youth, it should also reward a few years in bottle as the structure softens and the aromatics gain complexity.

Production
Produced in Pauillac on Bordeaux’s gravelly left-bank terroir, the wine benefits from well-drained soils that encourage depth and tension in the fruit. Grapes are typically harvested with care from estate vineyards and vinified to preserve purity, balance, and the signature structure of the appellation, often with aging in French oak to add texture and complexity.

Food & Serving
This wine pairs beautifully with roasted lamb, beef tenderloin, duck breast, and mushroom-based dishes, as well as firm cheeses. Serve at around 16–18°C, and consider decanting for 30–60 minutes if opening young to let the aromatics and tannins open up.
