Griesel & Compagnie Pinot Noir Granit -F- Brut Nature Exquisit 2016 is a rare, terroir-driven sparkling wine from Germany’s Hessische Bergstraße, crafted entirely from Pinot Noir (Spätburgunder). Pressed as a white “Blanc de Noirs” and bottled Brut Nature, it shows the grape’s elegance in its purest, most uncompromising form. With only a few bottles still available, this 2016 vintage cuvée offers a distinctive expression of cool-climate Pinot and granitic soils, made in the tradition of top grower sparkling wines.

Tasting Notes
In the glass, the wine typically shows a pale straw to very light onion skin hue, with a fine, persistent mousse and delicate bead. The nose opens with precise, cool aromas: green and yellow apple, lemon zest, quince and white peach, layered with notes of brioche, crushed stone, roasted hazelnut and a hint of red berry from its Pinot Noir origins. On the palate, it is taut, dry and chiselled, with Brut Nature tension and a vibrant, saline backbone. Citrus and orchard fruits are framed by subtle redcurrant and wild strawberry nuances, riding on a spine of chalky-mineral structure drawn from granitic soils. The texture is creamy yet focused, with well-integrated autolytic tones of brioche and pastry adding complexity. The finish is long, linear and mouthwatering, making it both contemplative and extremely food-friendly. This 2016 vintage has the structure to continue evolving for several more years under proper cellaring, gaining additional nutty, toasty and honeyed complexity while retaining its core freshness.

Production
Sourced from Pinot Noir (Spätburgunder) vines rooted in granitic and weathered stone soils along the Hessische Bergstraße, this sparkling wine reflects a cool, hillside terroir that naturally preserves acidity and aromatics. Grapes are carefully hand-harvested at optimal ripeness for sparkling wine, with an emphasis on healthy, perfectly balanced fruit. The Pinot Noir is gently pressed as a white base wine (Blanc de Noirs), minimizing skin contact to maintain clarity and finesse. Fermentation takes place with a focus on preserving purity and precision, followed by a traditional second fermentation in bottle. Extended lees aging adds texture, depth and fine mousse, and the wine is released as Brut Nature, without dosage, to let the character of vintage, grape and granitic soils show clearly in the glass.

Food & Serving
This Brut Nature Pinot Noir sparkling is superb with refined, mineral-driven dishes such as oysters, scallops, ceviche and sashimi, as well as delicate white fish, tartare of sea bass or trout and simple preparations of prawns. It also pairs beautifully with poultry in light cream sauces, veal carpaccio, sushi, fine charcuterie and soft, bloomy-rind cheeses. Serve well-chilled at around 8–10 °C to highlight its precision and minerality. A short decant in a carafe or simply pouring the first glass and letting the bottle sit open for 10–15 minutes can help the aromas unfurl, but extended decanting is not necessary; fine white wine glasses or tulip-shaped sparkling flutes work best.
