Griesel & Compagnie Blanc de Blancs Degorgement Tardif Brut Nature 2020 is a finely crafted German sparkling wine that showcases the elegance and purity of Hessische Bergstraße. Made exclusively from white grapes and bottled with no dosage, it offers a razor-sharp, authentic expression of terroir. The “Degorgement Tardif” (late disgorgement) elevates this cuvée, adding extra depth and complexity from extended aging on the lees.

Tasting Notes
In the glass, this Blanc de Blancs shines a pale straw to light gold, with a fine, persistent bead that speaks to careful bottle fermentation. The nose is precise and layered: think green apple, pear, and lemon zest, supported by hints of white flowers, fresh brioche, chalk, and a subtle nuttiness that reflects its longer time on the lees. On the palate, it is bone dry and focused, with Brut Nature tension and excellent structure from Chardonnay and Weissburgunder/Pinot Blanc. Crisp orchard fruits, citrus, and a touch of stone fruit mingle with saline minerality and delicate pastry notes, creating a harmonious balance between freshness and autolytic complexity. The finish is long, linear, and mouthwatering, with a chalky grip that invites another sip. Thanks to its extended lees aging and solid acid backbone, this 2020 has very good aging potential; over the next several years it should gain even more nutty, toasty nuance while retaining its vibrant core.

Production
Sourced from vineyards in the Hessische Bergstraße, this Blanc de Blancs reflects a cool, hilly terroir with limestone- and loess-influenced soils that favor freshness, finesse, and minerality. Grapes are typically hand-harvested at optimal ripeness for sparkling wine, ensuring healthy fruit with bright acidity and moderate potential alcohol. After a gentle pressing, the base wines are fermented—often in a mix of stainless steel and, in part, neutral vessels—to preserve purity and textural finesse before undergoing traditional-method second fermentation in bottle. The hallmark of this Degorgement Tardif is its extended aging on the lees, which deepens complexity, refines the mousse, and adds a subtle, creamy autolytic character before disgorgement without dosage.

Food & Serving
This Brut Nature is a versatile partner for refined, mineral-driven cuisine. It pairs beautifully with oysters, scallops, and other shellfish, as well as tartare of white fish, sushi, and sashimi. On land, try it with goat cheese, lightly aged hard cheeses, vegetable tempura, or delicate poultry dishes with citrus or herb accents. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its precision and freshness; a brief opening in the glass or a short, gentle decant in a wide carafe can help reveal the wine’s more subtle autolytic and nutty notes without diminishing its fine bubbles.
