Tasting Notes
In the glass, Les Guinottes 2022 shows a bright, limpid red hue with shimmering ruby reflections. The nose opens immediately with vivid aromas of red berries—blackcurrant, morello cherry, and redcurrant—layered with gentle smoky tones, forest floor, and a touch of gamey, savory nuance that is so typical of authentic Burgundy Pinot Noir.
On the palate, the wine is medium-bodied yet surprisingly rich and complex for its appellation, with a firm but silk-edged texture. Juicy red fruit is underscored by earthy, humus-like notes and a faint smokiness, all carried by supple, fine-grained tannins and a well-judged freshness. The finish is poised and harmonious, making it both accessible in its youth and capable of evolving gracefully. With proper cellaring, it offers an aging potential of around 4–8 years, during which its savory, tertiary nuances will continue to unfold.
Production
Les Guinottes comes from a 1.10 ha parcel at the southern tip of the Côte Chalonnaise in Saône-et-Loire, within the commune of Buxy. Here, classic Burgundy limestone-clay soils, well-drained slopes and a temperate continental climate provide an ideal terroir for Pinot Noir, delivering both ripeness and freshness. The grapes are fully destemmed, then vinified in vats for about four weeks, allowing for a slow, thorough extraction that highlights aromatic richness without excessive hardness. After racking, the wine is split for élevage: 50% matures in oak barrels to add texture and subtle spice, while the remaining 50% rests in stainless steel to preserve purity of fruit. The components are aged for 12 months before blending and bottling, striking a careful balance between structure, finesse and varietal expression.

This Bourgogne Pinot Noir pairs beautifully with classic Burgundian-inspired dishes and simple, flavorful cooking. Think meats in sauce or grilled cuts such as a good Charolais beef fillet with jus, fondue bourguignonne, or characterful cheeses like Époisses and Coulommiers. With a few years of bottle age, it becomes a refined partner for roast lamb, duck, and game dishes. Serve at 16–18°C; a light decant of 20–30 minutes can help the wine open up its smoky and earthy nuances, especially in its first few years after release.

Domaine des Guignottes is part of the Maison Goichot story, a family enterprise that began in 1947 with the determination of André-Marcel Goichot in Merceuil, near Beaune. Born to a vineyard worker and raised with modest means, André-Marcel started by collecting empty bottles in the streets and trading them with local merchants, gradually building enough capital to purchase his first parcel of vines—thus founding Maison Goichot. Over the decades, the family has grown from a small négociant house into a respected producer and domaine owner, rooted firmly in Burgundy tradition while embracing thoughtful innovation. Today, the Goichot name is associated with reliable, terroir-driven wines across the region, with Les Guinottes standing as a fine example of their commitment to expressing the character of the Côte Chalonnaise through honest, well-crafted Pinot Noir.
