Tasting Notes
In the glass, Sartiu 2021 shows a bright, medium-deep ruby color with garnet highlights at the rim. The nose opens immediately with pure red fruits—wild strawberry, ripe cherry and pomegranate—layered with Mediterranean herbs, dried flowers, sweet spice and a subtle hint of licorice and smoky stone.
On the palate, the wine is medium-bodied yet generous, with silky tannins and a lively, mouthwatering acidity that keeps the juicy fruit in perfect balance. Flavors of cherry, raspberry and red plum are intertwined with notes of thyme, myrtle, pepper and a gentle, earthy minerality typical of Mamoiada’s granitic soils. Production
Sartiu Cannonau di Sardegna is sourced from hillside vineyards around Mamoiada, in central Sardinia, where elevations often exceed 600 meters above sea level. Here, old-vine Cannonau grows on decomposed granite soils that are poor, rocky and well-drained, naturally limiting yields and concentrating flavor. The Sedilesu family farms their vines organically with a strong respect for traditional, low-intervention methods, often harvesting by hand to ensure careful selection of perfectly ripe grapes. In the cellar, fermentation typically takes place with indigenous yeasts, allowing the natural character of Cannonau and the Mamoiada terroir to shine through. Maceration on the skins is conducted gently to extract color, aroma and fine tannins without heaviness, followed by maturation in neutral vessels (such as large, old oak casks or concrete), preserving freshness and purity of fruit rather than overt oak influence.
Food & Serving
This Cannonau pairs beautifully with richly flavored Mediterranean and Italian dishes. Think grilled or roasted lamb, herb-crusted pork, fennel sausage, slow-cooked ragù, roast chicken with rosemary, or hearty pasta dishes with tomato and pecorino. It also works well with aged cheeses, charcuterie, and earthy vegetable preparations such as roasted root vegetables or wild mushrooms. Serve Sartiu 2021 at about 16–18°C. A brief decant of 30–45 minutes can help the aromas fully open and the tannins soften, but it is also highly enjoyable poured straight from the bottle in its youth.
