Production
Produced in Veneto, Rosso Ca' Del Merlo reflects Quintarelli’s highly traditional approach and the character of the region’s historic winemaking. The blend brings together Corvina, Corvinone, and Rondinella with Cabernet and Merlot, creating a wine that sits outside strict category lines while still expressing a distinctly northern Italian identity. It is made using the ripasso method, with a second fermentation on Amarone pomace, followed by seven years of aging in large Slovenian oak casks for added depth, complexity, and balance.

Food & Serving
This is an ideal match for game, rich meat dishes, braised and roasted red meats, and mature cheeses. Serve at around 16–18°C, and consider decanting for a couple of hours to allow the wine’s aromas and structure to fully open up.
