Tasting Notes
In the glass, Les Herses 2023 shows a pale straw color with green reflections, signaling its youthful freshness and vibrant character. The nose opens with classic Sancerre aromatics: citrus zest, white grapefruit and lime blossom, layered with notes of green apple, white currant and a distinct chalky, flinty minerality. Subtle hints of fresh herbs, gooseberry and wet stone add complexity as the wine unfolds in the glass. On the palate, the wine is taut, precise and intensely refreshing, with a lively backbone of acidity that lifts the bright citrus and orchard fruit. Flavors of lemon, pomelo and crunchy pear are interwoven with saline, stony notes and a gentle, mouthwatering bitterness on the finish that invites another sip. Les Herses is sourced from prime Sauvignon Blanc parcels on the hillsides of Sancerre in the Loire Valley, where limestone and flint soils (silex) impart the region’s trademark tension and mineral edge. The cool continental climate, moderated by the Loire River, allows for a long, slow ripening period that preserves acidity and aromatic intensity. Grapes are typically harvested by hand at optimal ripeness to ensure strict selection in the vineyard. In the cellar, Gitton Père & Fils favors a gentle, traditional approach: careful pressing, cold settling and a cool, temperature‑controlled fermentation in stainless steel to preserve purity of fruit and terroir expression. The wine is then aged on fine lees for additional texture and complexity before bottling, without excessive oak influence, allowing the site and vintage to shine clearly.

Food & Serving
Sancerre Les Herses 2023 is a natural partner for classic Loire Valley goat’s cheese (such as Crottin de Chavignol), as its acidity and minerality cut beautifully through the creaminess. It is also superb with oysters, shellfish, sushi and sashimi, grilled white fish, ceviche, and fresh salads featuring citrus, fennel or herbs. Lighter poultry dishes, asparagus, and goat cheese tart also pair very well. Serve chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromas open fully.
