Tasting Notes
In the glass, the 2004 Coteaux des Quarts shows a deep lemon-gold hue, hinting at its age and concentration. Swirl the glass and you’ll find a complex aromatic profile: preserved lemon, dried apple and pear, acacia honey and almond cream, layered with notes of hazelnut, chamomile, beeswax and a subtle flinty, smoky edge typical of quality Mâconnais limestone. On the palate, this is a richly textured yet balanced Chardonnay, with a silky mouthfeel supported by a still-vibrant line of acidity. Flavors of roasted stone fruits, lemon curd and baked apple mingle with brioche, toasted nuts and a gentle saline minerality, leading into a long, savory finish. At this stage, the wine is fully mature and drinking at or near its peak, with its primary fruit evolved into complex tertiary notes. It should be enjoyed now and over the short term, ideally within a few years of purchase, to capture its remaining freshness and developed nuances.

Production
Coteaux des Quarts is one of the prized lieux-dits of Viré-Clessé, a south- to southeast-facing slope on limestone-rich soils with clay and fossilized marine sediments that give the wine its tension and chalky mineral character. Gilles & Catherine Vergé are known for working their vineyards with great care, often favoring low yields, sustainable or organic-inspired practices, and hand-harvesting to ensure only optimally ripe Chardonnay grapes make it to the cellar. In the winery, the focus is on respectful, minimally interventionist winemaking: gentle pressing, natural fermentations with indigenous yeasts, and élevage on fine lees—typically in a mix of stainless steel and older oak—allowing the terroir to speak without being overwhelmed by new wood. The result is a Viré-Clessé built for both precision and age-worthiness, as this 2004 clearly demonstrates.

Food & Serving
This mature Viré-Clessé is a superb partner for richer poultry dishes such as roast chicken with thyme and garlic, guinea fowl, or turkey with a creamy mushroom sauce. It also pairs beautifully with seared scallops, poached white fish in beurre blanc, lobster, and mature cow’s milk cheeses like Comté, Beaufort or aged Gruyère. Serve slightly cool, at around 11–13°C (52–55°F), rather than fridge-cold, to allow the aromatics to fully open. A gentle decant of 20–30 minutes can help the wine shed any initial reductive or oxidative notes and reveal its layered bouquet, but handle it carefully to preserve its delicate, evolved character.
