Description
Giacomo Borgogno Barolo Fossati 2021 is a distinguished expression of Nebbiolo from one of Piedmont’s historic estates, founded in 1761. Made from the Fossati cru in Barolo and farmed according to organic principles, it combines silk-textured richness with the firm structure and ageing potential for which great Barolo is renowned.
Tasting Notes
In the glass, the wine displays a deep ruby colour with the garnet hues typical of mature Nebbiolo. Its complex bouquet opens with subtle smoky and empyreumatic notes, followed by cherry jam, hibiscus, mint tea and star anise. The palate is full-bodied yet remarkably silky, with vibrant red-fruit freshness, well-defined structure and refined, persistent tannins. A balsamic finish adds further depth and length.
The wine’s tannic framework and concentration give it excellent ageing potential. It can be enjoyed now with decanting, but should develop greater aromatic complexity and softness over the coming years when stored in suitable cellar conditions.
Production
The grapes come from the Fossati cru in the Barolo area, where south-easterly facing vineyards sit at approximately 290–500 metres above sea level. The calcareous clay-marl soils, with a modest sandy component, encourage both ripeness and elegance in the Nebbiolo. The organically managed vines are harvested in the first ten days of October. Fermentation takes place in concrete vats using indigenous yeasts, followed by at least 40 days of temperature-controlled submerged-cap maceration. After racking and malolactic fermentation, the wine matures for four years in large Slavonian oak casks, followed by a further six months of bottle rest before release.
Food & Serving
Its substantial structure makes Barolo Fossati an excellent match for red meats, game, richly flavoured pork dishes and mature hard cheeses. It is particularly well suited to braised beef, venison and traditional Piedmontese preparations. Serve at approximately 18°C, allowing the bottle to come close to room temperature without becoming warm. Decant for around one to two hours before serving to soften the tannins and reveal the wine’s layered bouquet.

Giacomo Borgogno e Figli was established in 1761 and is one of the historic names of Piedmont’s Barolo region. The estate is known for its traditional approach to Nebbiolo, combining extended maturation in large Slavonian oak casks with careful attention to the character of each vineyard. Its commitment to organic farming also includes preserving eight hectares of woodland, supporting biodiversity across the estate. The Barolo Fossati 2021 reflects this long-standing heritage and the distinctive qualities of its cru, and follows the strong critical reception associated with the estate’s wines.
