The vines are typically planted on well-drained, gravelly and alluvial soils with a strong mineral component, helping to shape the wine’s tension and clarity. Grapes are generally hand-harvested at optimal ripeness to preserve the delicate skins and aromatics. In the cellar, a gentle pressing and cool, temperature-controlled fermentation in stainless steel are commonly used to protect the grape’s floral and citrus notes, followed by a short maturation on fine lees to add subtle creaminess and structure without overshadowing freshness.
