Description
Georges Laval Garennes Extra Brut Bio is a characterful grower Champagne that captures the purity and energy of organically farmed fruit from some of Champagne’s most prized hillsides. Crafted in tiny quantities, this cuvée blends Chardonnay, Pinot Noir and Pinot Meunier into a refined, intensely expressive wine with remarkable depth for an Extra Brut. The name “Garennes” refers to local parcels that have long been cultivated by the Laval family, highlighting both place and tradition in every bottle.
Tasting Notes
In the glass, Garennes Extra Brut Bio shows a luminous pale gold hue with fine, persistent bubbles forming a delicate mousse. On the nose, it opens with vibrant aromas of lemon zest, green apple and ripe pear, followed by hints of white flowers, chalk dust, pâtisserie, and a subtle touch of toasted nuts and citrus peel.
The palate is racy yet beautifully balanced, with a bone-dry Extra Brut profile that still feels generous thanks to the texture of the base wines and careful élevage. Crisp citrus, orchard fruits and a saline minerality drive the core, supported by nuances of brioche, almond and a slight spice from the Pinot components. The finish is long, clean and chalky, with a mouthwatering acidity that invites another sip. Production
Sourced from organically certified vineyards in and around Cumières and neighboring villages, Garennes Extra Brut Bio reflects the steep, sun-exposed slopes and chalk- and limestone-rich soils that define Georges Laval’s terroir. Yields are kept low, and harvesting is done by hand to ensure only perfectly ripe, healthy grapes make it to the press. In the cellar, fermentation typically takes place with indigenous yeasts, often in enamel or neutral oak, and a portion of reserve wines adds depth and continuity of style. The wine matures on its lees for an extended period before disgorgement, with a very low dosage to respect the character of the terroir and the precision of the fruit, resulting in a pure, incisive Extra Brut expression.

This Champagne is a superb match for refined yet simple cuisine that allows its minerality and tension to shine. Think oysters, scallops carpaccio, sashimi, ceviche, or lightly grilled white fish with citrus and herbs. It also works beautifully with soft goat cheese, sushi, tempura, or elegant vegetable dishes like asparagus, fennel or celeriac. Serve well-chilled at around 8–10°C. A brief 10–15 minutes in a larger-bowled white wine glass or a gentle, short decant in a carafe can help the aromas open up, especially if serving with more complex dishes.
