Production
Although presented under the wider Île-de-France indication, the heart of French Bloom Extra Brut lies in the oceanic-influenced terroir of Limoux in southern France. Here, vineyards rooted in clay- and limestone-rich soils give Chardonnay its vibrant acidity, tension and natural saline character. The grapes are organically grown and carefully harvested at optimal ripeness to retain freshness and aromatic purity. After a gentle pressing and temperature-controlled fermentation, part of the base wine is matured in oak barrels to add texture and complexity. The wine is then meticulously dealcoholised to 0.0%, preserving the aromatics and structure, before being blended and lightly carbonated to achieve its fine, persistent sparkle—all without sugar, sulfites or additives.
