Tasting Notes
In the glass, the 2017 Pinot Noir Bio shows a translucent ruby to garnet hue, with a delicate brightness that hints at both freshness and depth. The nose opens slowly and subtly, revealing layers of dark cherry, preserved strawberry and wild raspberry, intertwined with floral notes of violet and a faint rose petal lift. Underneath the fruit, you’ll find fine, savoury nuances: cigar box, dried herbs, a touch of underbrush and a gentle, woody spice shaped by extended time in barrel.

Production
The fruit for Frank John Pinot Noir Bio 2017 comes from carefully tended vineyards in the Pfalz, where warm days, cool nights and diverse soils (including limestone and loess) give Spätburgunder both ripeness and a distinct mineral line. As a Demeter-certified estate, all work in the vineyard follows strict biodynamic principles, with meticulous handwork throughout the season and a selective hand harvest at optimal ripeness. In the cellar, the grapes are fermented spontaneously with indigenous yeasts, followed by a natural malolactic fermentation. The wine is then raised for an extended period in wooden barrels, allowing it to develop depth and texture without overt oak dominance. Prior to bottling, only a minimal amount of sulfur is added, and the wine is given further time in bottle before release to harmonize and show its full character.
Food & Serving
This refined Pinot Noir pairs beautifully with dishes that echo its balance of delicacy and earthiness: roast duck or guinea fowl, veal with mushrooms, herb-crusted lamb, or classic coq au vin. It also works wonderfully with game birds, truffled pasta, mushroom risotto and aged semi-hard cheeses. Serve at 14–16°C (57–61°F) in Burgundy-style stemware to emphasize its aromatic detail.
