Tasting Notes
In the glass, this Champagne shows a luminous, pale gold color with fine, persistent bubbles forming a delicate mousse. The nose is clean and precise, offering notes of fresh citrus, green apple and pear, layered with white flowers, chalk, toasted brioche and a hint of almond and crushed stone.
On the palate, it is bone dry, taut and vibrant, with a racy acidity that is beautifully balanced by a supple, finely textured mid-palate. Flavors of lemon zest, crisp orchard fruit and subtle stone fruit are wrapped in a distinct saline and chalky minerality, with nuances of hazelnut and light pastry emerging as it warms in the glass. Production
François Secondé works primarily with Grand Cru terroirs in Champagne, where chalk-rich soils and cool, northerly climate deliver both intensity and finesse. Grapes are hand-harvested at optimal ripeness to ensure healthy fruit and precise selection in the vineyard. The blend of Pinot Noir, Chardonnay and Pinot Meunier is vinified with a focus on clarity and purity, typically using temperature-controlled stainless-steel tanks and, in part, older barrels to add subtle texture without overt oak influence. Extended aging on the lees helps build complexity and a fine, creamy mousse, while the decision to bottle this cuvée with zero dosage means no sugar is added at disgorgement, preserving a completely dry, incisive style that reflects the terroir and the quality of the base wines.
Food & Serving
This zero-dosage Champagne is a superb match for clean, precise flavors and dishes where freshness and texture matter. Think oysters, scallop crudo, sashimi, shrimp tartare, caviar, or simple grilled white fish with lemon and herbs; it also works beautifully with goat cheese, fresh cheeses, sushi, tempura and lightly salted charcuterie. Serve well-chilled at around 8–10°C (46–50°F) in a white-wine or tulip-shaped Champagne glass to allow the aromas to unfold. A brief 10–15 minutes of air in the glass is sufficient; full decanting is generally not necessary, though opening the bottle a little in advance will help the wine reveal more nuance and depth.
